behind Andalusia's most local (and least known) tomato recipe

There’s a particular tomato-based recipe in Seasoning that I worry hides its fabulousness under the bushel of other tomato ideas that surround it. I worry about that because this recipe is a total cracker - a tomato, garlic and green pepper dip that I first encountered in Andalusia and let’s face it, the Andalusians know a thing or two about how to get the most out of a tomato.
