The best people poach chickens
Why I think that's true - plus a recipe for being that person
“The best people poach chickens” is what I heard myself say the other day. And not just anywhere. Not quietly to myself in the kitchen, perhaps while poaching a chicken and feeling pretty good about it. Not as I was reading a recipe about poached chicken. Not even while eating chicken that someone I love had poached for me. No – this was in an interview, in response to author Katherine May saying that she liked to poach a chicken.
While I barely know Katherine personally, I am totally prepared to think that I consider her the best of people. But beyond that – what did I mean? I know I meant it. I said it while on stage at the British Library and you don’t lie there. But that isn’t quite the same thing as knowing what I meant by it.
Just what is it I think so special about the kind of person who poaches a chicken? Well, after a few days of the thought rattling around my head and trying to untangle itself, I think it is that they are showing themselves to be a soul who values substance and flavour over just the image of something fabulous.
